Mikhailenko This article describes the process of food quality control based on the use of statistical methods for processing the results of measuring the diff use refl ection of product samples in selected spectral ranges.In the proposed approach, the spectral-textural characteristics of the studied samples determined by the brightness histogram are compared with similar characteristics of the selected standard. For the recognition of solid and bulk media, an image matching method based on the comparison of the Euclidean distance between the vectors of spectral and textural features was applied.
